A snack can say “low carb” on the front, then look very different once you turn it over. Learning how to read net carbs means you can make a quick, confident call from the Nutrition Information Panel, whether you are choosing a weekday pantry staple, a post-training protein bar or a sugar-free treat.
For Australian keto and low-carb eaters, there is one especially useful detail: the carbohydrate number on most Australian labels is often already close to what overseas brands call net carbs. But “often” is not “always”. Fibre, serving sizes, sugar alcohols and marketing claims can all change the picture.
What net carbs actually mean
Net carbs are the carbohydrates likely to have the greatest effect on blood glucose and, for many people, ketone levels. The usual idea is simple: start with total carbohydrate and remove the carbohydrates your body does not fully digest or absorb, most commonly dietary fibre.
On many US labels, the calculation is written like this:
Net carbs = total carbohydrates - fibre - selected sugar alcohols
Australian and New Zealand nutrition panels work differently. The listed carbohydrate figure generally refers to available carbohydrate and excludes dietary fibre. That means you usually do not need to subtract the fibre line from the carbohydrate line again. For a straightforward Australian product, the carbohydrate figure per serve is often the most practical starting point for your net-carb count.
That is handy, but it does not make every label a one-number decision. Sugar alcohols, imported packaging and very small serving sizes deserve a closer look.
How to read net carbs on an Australian label
Start at the Nutrition Information Panel, not the front-of-pack claim. Look for the line labelled Carbohydrate and then the smaller line underneath, Sugars.
Carbohydrate is the broader figure. Sugars are one type of carbohydrate, so sugars will be included within the carbohydrate total. A product with 3 g carbohydrate and 1 g sugars has 3 g of carbohydrate to consider, not 4 g. Adding those figures together is one of the easiest label-reading mistakes to make.
Next, check whether you are looking at per serving or per 100 g. Both are useful, just for different reasons. Per serving tells you what the manufacturer expects you to eat. Per 100 g lets you compare products fairly, especially when one snack brand calls 20 g a serve and another calls 45 g a serve.
For keto eating, the number that matters most is the amount you will actually eat. If a cracker label lists 2 g carbohydrate per serve but you routinely have two serves with cheese and dip, count 4 g. There is nothing wrong with enjoying satisfying keto food - the key is making the label match your real plate.
A simple label example
Imagine a pack of low-carb crackers lists the following per serve:
- Carbohydrate: 2.8 g
- Sugars: 0.6 g
- Dietary fibre: 7.5 g
Now compare it with an imported US-style protein bar that says 18 g total carbohydrates, 10 g fibre and 6 g sugar alcohols. Its stated net carbs may be 2 g, but you need to check the type of sugar alcohol before taking that figure at face value.
Sugar alcohols: where labels need more context
Sugar alcohols, also called polyols, are sweeteners used in many sugar-free chocolates, lollies, bars, syrups and baking products. Common names include erythritol, maltitol, xylitol, sorbitol and isomalt. They do not all behave the same way in the body.
Erythritol has very little impact on blood glucose for most people and is commonly treated as having minimal net carbs. It is popular in keto-friendly sweets for that reason. Xylitol may have a modest effect for some people and is also worth keeping well away from dogs, as it is highly toxic to them.
Maltitol is the one to watch more carefully. It can raise blood glucose more than erythritol and may not suit a strict keto approach, even when the packet is labelled sugar-free. It can also cause digestive discomfort when eaten in larger amounts. If a sweet treat relies heavily on maltitol, the front claim may be less useful than the ingredient list and carbohydrate panel.
Australian labels may include polyols within the carbohydrate figure, while imported labels can present them under total carbohydrates and subtract them to create a net-carb claim. There is no single universal legal formula for “net carbs”, so treat the claim as a helpful prompt, not the final answer.
Check the ingredient list as well as the numbers
The Nutrition Information Panel tells you how much carbohydrate is present. The ingredients list helps explain where it comes from.
Ingredients are listed in descending order by weight. If sugar, glucose syrup, rice flour, tapioca starch, wheat flour, maltodextrin or maltitol appears near the top, the product may be harder to fit into a very low-carb day. This matters particularly with sauces, flavoured drinks, protein snacks and “better-for-you” packaged foods, where sweetness and texture can come from several sources.
On the other hand, ingredients such as almond meal, coconut, seeds, cacao, olive oil, butter, cream, collagen, monk fruit and erythritol are common in products designed with lower carbohydrate intake in mind. They are not an automatic green light - portion size still counts - but they give you useful context.
Allulose is another sweetener keto shoppers may see more often. It is generally used because it offers sweetness with a very low glycaemic impact. How it is displayed can vary by product and label format, so check the stated carbohydrate figure, ingredients and the brand’s serving guidance rather than assuming every allulose product will look identical on a panel.
Watch for serving-size tricks, without overthinking it
A label is not trying to ruin your snack break, but it is designed around a nominated serve. Sometimes that serve is sensible. Sometimes it is a teaspoon of sauce, half a bar or a tiny handful of chips.
Use per 100 g to compare similar foods, then bring it back to your usual portion. A pasta alternative with 5 g carbohydrate per 100 g may fit brilliantly into dinner. A sauce with 2 g per tablespoon may also fit well, unless four generous tablespoons are going into the pan.
The same thinking applies to keto baking. Low-carb flours and sugar-free sweeteners can help recreate favourite rituals, from pancakes to brownies, but the finished recipe still has ingredients and portions. Count the slice you eat, not just the recipe’s low-carb label.
Your carb target changes the answer
There is no magic carbohydrate number that suits every low-carb eater. Someone following a strict ketogenic approach may keep daily net carbs around 20 to 30 g, while someone eating low carb or LCHF for appetite control, training or reduced sugar may have more flexibility.
Your tolerance can also shift with exercise, sleep, stress, menstrual cycle, medication and the rest of the meal. A product that works beautifully for one person may be less suitable for another. If maintaining ketosis is your priority, a blood, breath or urine ketone test can help you understand your own response over time, rather than relying only on a label claim.
That does not mean testing every crumb. It means using labels as your daily tool, then using personal feedback when you want a clearer picture.
A faster way to shop keto-friendly foods
When you are comparing pantry staples, start with carbohydrate per serve and per 100 g. Check the ingredient list for starches, sugars and the type of sweetener used. Then consider the food’s role in your day.
A 4 g carb serve of a fibre-rich cracker may be a great choice with lunch. A 4 g carb serve of sugar-free chocolate may also be a welcome treat, but it is not necessarily a substitute for a meal. Both can belong in a sustainable way of eating - they simply do different jobs.
