Oven-Baked Lemon Butter Salmon with Crispy Green Beans

This is the dinner to make when everything feels like too much. One tray. Straightforward ingredients. Big flavour from lemon, garlic, and butter. The green beans roast in the same tray drippings, so they actually taste like something.

Ingredients

  • 2–3 salmon fillets (skin on or off)
  • 300–400 g green beans, trimmed
  • 3 tbsp butter (or ghee), melted
  • 3 cloves garlic, finely chopped (or 2 tsp garlic paste)
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • Optional: 1 tbsp capers
  • Optional to finish: chopped parsley or dill

Method

  1. Heat oven to 220°C (200°C fan). Line a large tray with baking paper.
  2. Add green beans to the tray. Drizzle with 1 tbsp of the melted butter and a pinch of salt. Toss to coat and spread out.
  3. Roast beans for 6 minutes to get them started.
  4. While beans roast, mix remaining melted butter with garlic, lemon zest, lemon juice, pepper, and the remaining salt.
  5. Push beans to one side of the tray. Place salmon fillets on the other side.
  6. Spoon the lemon-garlic butter over the salmon. If using capers, scatter them over the fish and beans.
  7. Bake for 6–9 minutes, depending on thickness, until salmon flakes easily and is just cooked through.
  8. Rest for 2 minutes. Finish with herbs if using, then serve straight off the tray.

Yes, but it’s easier to overcook the outside before the middle is ready. Best option: thaw first. If cooking from frozen, add extra time and cover loosely with foil for the first half.

Asparagus works well. Zucchini also works, but it releases more water, so roast it separately if chasing crispy edges.

Is this good for leftovers?

Yes. Store in an airtight container for up to 2 days. Reheat gently (lower oven or microwave on low) to avoid drying the fish.
